Yum Kai Dao, a popular Thai street food, is a spicy and sour salad made with crispy fried eggs, vegetables, and a tangy dressing. In this recipe, we’ve added the benefits of CBD oil to create a relaxing and calming culinary experience. CBD, or cannabidiol, is a non-psychoactive compound found in cannabis plants that has been shown to reduce anxiety and inflammation. By incorporating CBD oil into the dressing, we’ve created a dish that not only tantalizes the taste buds but also promotes relaxation and well-being.

CBD-Infused Yum Kai Dao Recipe

Ingredients for dressing:

  • 1-2 Thai chilies
  • 1 ½ tablespoon palm sugar
  • 3 tablespoon lime juice
  • 2 tablespoon + 1 teaspoon fish sauce
  • 10-15 mg CBD oil (adjust to your desired dose)

Ingredients for salad:

  • Neutral oil for frying
  • 4 eggs, room temperature
  • ¼ small red or yellow onion, julienned
  • 2 stalks, celery plus a handful of leaves
  • ½ cup tomatoes, cut in wedges
  • ½ cup chopped cilantro
  • ¼ cup roasted peanuts, roughly chopped or lightly crushed

Instructions:

For dressing:

  1. Add the chilies to a mortar and pestle and pound until fine.
  2. Add the palm sugar and pound to dissolve into a thick paste.
  3. Add the lime juice, fish sauce, and CBD oil. Stir to combine.

For fried eggs:

  1. In a wok or an small non-stick frying pan, add about a quarter inch of oil.
  2. Heat the oil over medium-high heat until very hot.
  3. Crack one egg into the oil, and if your oil is hot enough the egg white should start to bubble right away.
  4. Use a spoon to baste the top of the egg with oil as it fries, and keep going for about 2 minutes or until the yolk is set and the white is bubbly and browned around the edges.
  5. Remove the egg from the pan and let it drain on a paper towel-lined plate.
  6. Repeat with the remaining eggs.

Assembly:

  1. Combine all the vegetables in a mixing bowl.
  2. Cut the eggs into six wedges, centered around the yolk so that there is a little bit of yolk in every piece.
  3. Add the eggs to the vegetables and pour the dressing over.
  4. Toss gently just to mix and plate.
  5. Top with roasted peanuts and serve with jasmine rice.
