Roasted Niçoise Salad with Halibut and CBD

- 1/4 cup of capers
- Salt and pepper to taste
- 2 tbsp freshly squeezed lemon juice
- 1 tsp Dijon mustard
Instructions:
- Roast the vegetables: Preheat the oven to 425°F (220°C). In a bowl, toss the eggplant, bell peppers, and zucchinis with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 30 minutes, or until tender.
- Prepare the halibut: Cut the halibut into 1-inch pieces and season with salt, pepper, and 1 tablespoon of CBD-infused olive oil.
- Pan-sear the halibut: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the halibut and cook for 3-4 minutes per side, or until cooked through.
- Assemble the salad: In a large bowl, combine the mixed greens, roasted vegetables, cherry tomatoes, tuna, olives, capers, and halibut.
- Make the vinaigrette: In a small bowl, whisk together the lemon juice, Dijon mustard, and 1 tablespoon of CBD-infused olive oil.
